Berry Loaf Cake

Ingredients
For The Cake
- 3 eggs
- 1/2 cup white sugar
- 1.5 tsp vanilla extract or sugar
- 1/2 cup labneh (cow labneh) or sour cream
- 1/2 cup vegetable oil
- 1.5 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup mixed berries, frozen or fresh dusted in flour so they don't sink
For The Crumble
- 1/2 cup white sugar
- 1/2 cup light brown sugar if not found just replace with white
- 1 tbsp cinnamon powder
- 6 tbsp softened butter
- 1 cup flour
- 1/2 cup shaved almonds
Instructions
For The Cake
- Preheat oven to 180C
- In a bowl, whisk by hand or stand mixer, eggs, sugar and vanilla until fluffy and pale
- Add the labneh, and mix
- Add oil and mix
- Add the dry ingredients and mix until just combined
- Make sure you dust your berries with flour, add them to the batter and gently fold them in
- Pour batter into greased and floured loaf pan ( I use a 9 inch)
Crumble
- Rub the crumble ingredients (except the almonds) between your fingers until you get a sand like texture. This recipe makes a lot of crumble, you don't need to use it all
- Top the cake batter with crumble and then top the crumble with the almonds
- Bake in a well preheated oven for 35-40 min

I used brown sugar (it was the only one I had) and it wasn’t as delicious as I’d hoped it would be. Think the taste would be different with white?

This cake’s name should be changed to Everyone’s fav cake. No joke. Kids adore it, adults crave it. I do it at least once every 2 weeks. Perfect for coffee breaks, afternoon playdates, morning or afternoon sweet cravings… i prefer it with mixed berries or raspberries but not with strawberries.
