I’ve been experimenting recently with sourdough as you all may have noticed. I had some discard yesterday and came up with this pizza crust. It is epic.

I might alter it the next time i make it, but for now these are the measurements i used. I’m still a newbie sourdougher so bare with me.

UPDATE: I made this dough with 100g active sourdough starter and skipped the yeast. Worked perfectly.

Sourdough Pizza Crust

Prep Time 10 minutes
Cook Time 15 minutes
Resting time 8 hours 15 minutes
Total Time 8 hours 40 minutes
Servings: 2 medium pizzas
Course: Main Course

Ingredients
  

  • 100 g sourdough starter discard
  • 1 tsp instant yeast
  • 220 g warm water
  • 320 g bread flour or all purpose flour
  • 8 g salt
  • 1 tbsp fine semolina

Method
 

  1. Add all the ingredients in a bowl and mix until fully incorporated
  2. Knead your dough by hand or stand mixer for 7-10 mins, it will be sticky at first but keep kneading with wet hands
  3. Slightly oil your bowl and put the dough inside, cover with plastic wrap and let it sit in the fridge for a minimum of 8hrs
  4. Once it has doubled, divide the dough in 2 and let it rest covered for another 10 mins
  5. Brush your pan with olive oil, sprinkle with some semolina
  6. Do not roll the dough, gently pull it with your hands onto a pizza pan or whatever pan you’re using and let it rest for another 5 min
  7. Add the sauce and whatever topping you want. Bake for 10 mins in a preheated oven (the maximum your oven gets, mine goes up to 270C)
  8. Remove it, add your cheese and bake for another 7-10 mins
