One of the best sauces that’s always available in my fridge. I use it as a quick fix for my pastas or as a pizza sauce. Very easy, and very forgiving.

Ingredients

  • 3 tbsp olive oil
  • 5 large sliced garlic cloves
  • 1/2 cup red wine optional
  • 1 tbsp chili flakes
  • 5-6 fresh basil leaves
  • 1 kg ripe tomatoes or 1 cup chopped tomatoes
  • 1 tsp salt
  • 1 cup water
  • 1 tsp black pepper freshly grinded

Instructions

  • In a sauce pan, heat your olive oil on low heat
  • Add your garlic and chili flakes and cook for a few minutes until fragrant
  • Add the wine, careful because it will splatter a bit and let them simmer for 5 mins
  • If using fresh tomatoes, you don’t need to peel them. If they aren’t super ripe then you can peel them if you don’t want a chunky sauce at the end
  • Add your tomatoes or canned/jarred chopped tomatoes into the pot
  • Add basil, salt, black pepper, and dry oregano
  • Bring them to a simmer and lightly squish the tomatoes
  • Add the water, cover and simmer for 40mins
  • Once all is cooked you can simmer with the pot open if you want a thick sauce for pizzas or keep as is if using for pasta
  • You can also blend the sauce if you want a liquidy sauce

Notes

Store in airtight container in fridge for up to a week
