Delicious vegan Lebanese dish. It’s ridiculously easy and literally takes 30 min to make. Some people call it mujaddara msafeye.

I add the cabbage salad sauce (lemon juice and olive oil) all over the mujjadara, and if i’m feeling good about myself i eat it with bread.

Lebanese Mujaddara

Ingredients
  

  • 2 cups Broad Green Lentils (washed)
  • 2 large Onions cut in half
  • 6 cups Water
  • 1/3 cup Egyptian rice (washed) Italian rice works as well
  • 1/2 cup Olive oil
  • 1 tsp Salt
  • 1.5 tsp Cumin

  • Hand Blender

Method
 

  1. From the 1/2 cup of olive oil take 2tbsp and heat them in a large pot
  2. Add the onions and fry around until they get some color (2 mins)
  3. Add the lentils, and fry around for another 2-3 mins. Cover with water and close the pot lid. Cook for 20-25 mins until the lentils are tender and cooked thru
  4. Add the rice, cumin, olive oil, and salt
  5. Turn the heat on low and cook for an additional 10 mins, uncovered. Make sure to stir every few minutes so it doesn’t stick to the bottom of the pan
  6. Once rice cooks thru and the mujaddara gets thick turn the heat off and using a hand blender, blend all until smooth
  7. Serve in plates. Allow to cool
  8. Serve with a cabbage salad
