Stuffed Zucchini with Lamb Chops – A Hea

🍽️ Stuffed Zucchini with Lamb Chops – A Hearty Family Favorite! 🥒🍖

A rich, comforting dish with tender zucchini stuffed with a spiced lamb and rice filling, slow-cooked over juicy lamb chops. And yes, you WILL have leftover stuffing – it’s inevitable in my case! 🤷‍♀️ But that just means extra goodness for another meal!

Ingredients

🔹 For the stuffing:
▫️ 2kg cored zucchini
▫️ 500g minced lamb
▫️ 1.5 cups washed Egyptian rice
▫️ 1.5 tsp allspice
▫️ 1.5 tsp cinnamon
▫️ 2 tsp salt
▫️ 2 tbsp olive oil

🔹 For the lamb chops:
▫️ 1.5kg lamb chops
▫️ 1.5 tsp allspice
▫️ 1.5 tsp cinnamon
▫️ 2 tsp salt
▫️ 2 tbsp olive oil

🔹 For cooking:
▫️ 1 tbsp olive oil
▫️ 2 tbsp @lurpakarabia butter
▫️ 3 cloves garlic, minced
▫️ 1 whole bulb of peeled garlic
▫️ 2.5-3 cups bone broth or water
▫️ 2 lemons

Method

1️⃣ Prepare the stuffing: Mix minced lamb, rice, spices, salt, and olive oil. Stuff the zucchini (and don’t stress about the leftover filling—it’s inevitable!).
2️⃣ Season the lamb chops: Coat with spices, salt, and olive oil.
3️⃣ Sear the lamb: In a large pot, heat olive oil and butter, then fry the minced garlic until fragrant. Add the lamb chops and sear until golden brown.
4️⃣ Assemble & cook: Place the stuffed zucchini over the lamb, add the peeled garlic cloves, pour in bone broth or water, sprinkle some salt, cover, and cook on very low heat for 2 hours.
5️⃣ Final touch: Add two lemons to the pot before turning off the heat.

This easy oven-baked shawarma is juicy, flavorful, and super satisfying! Layered, pressed, baked, then broiled to crispy perfection – just like your favorite shawarma spot! 🤩✨

Ingredients:

🍗500g chicken breast (frozen for 1 hour, then sliced)
🧂 2tsp Salt
🌶️ 1 tsp grated nutmeg
🧂1.5 tsp sumac,
🌶️1 tsp all-spice
🧂3-5 small mastic
🍋 Peel of 1 lemon
🥄 1/4 cup white vinegar
🫒 1/2 cup olive oil
🧄 5 cloves garlic (mashed)
🧅 2 onions (coarsely chopped)

How to Make It:

1️⃣ Mix chicken with spices, vinegar, lemon peel, oil, garlic & onions. Marinate 24 hours.
2️⃣ Layer & press in a loaf pan, then bake at 180°C (fan on top & bottom) for 30 mins.
3️⃣ Flip onto another tray & broil for 10-15 mins until golden! 🔥
4️⃣ Serve with pita bread, garlic sauce, pickles & air-fried or fried potatoes. 🥙🍟
