Back at it with the holiday cookies, but this time it’s one of my favorite all year round cookie recipe. I make these for their birthdays, playdates, literally any event that needs a cookie, or two. These also freeze very well (the dough) so you can bake some, and keep the dough in the freezer for a quick batch.
They’re also super fun to decorate, you can use buttercream or royal icing or just a simple icing to decorate them and have fun.
Classic Sugar Cookies
Ingredients
- 6 cups all purpose flour 750g
- 1 tsp salt
- 2 cups softened unsalted butter 454g
- 2 cups sugar 400g
- 2 cold eggs
- 1 tbsp vanilla extract
Instructions
- In a large bowl sift together the dry ingredients
- With an electrical mixer using the paddle attachment, cream together the butter and sugar until pale and fluffy, about 5 minutes
- Add in eggs and mix until combined
- Add in the dry mix, and mix on low speed until combined and a dough forms
- Add vanilla extract and mix
- Remove half the dough, make a ball, and place on a large piece of plastic wrap. Wrap the sides of wrap over the ball, then press down with the palm of your hand and make a disc. Finish wrapping the disc with the plastic wrap. Repeat with 2nd half of dough. Chill both discs of dough for about 1 hour.
- Once done chilling, remove one of the discs and place the dough in between two parchment papers. It will take a couple of minutes to soften so use some arm strength to roll the dough into desired thickness. I would suggest around 1cm
- Chill the rolled out dough in the fridge while you roll out the second piece of dough
- Preheat your oven to 160C
- Remove the first rolled out dough and cut out desired shapes and place them on parchment paper
- If you want to guarantee awesome cookies i would suggest chilling in freezer for 10 min before baking in oven
- Bake them for 12-14 min, until the edges are golden
- Cool them before removing them as they will be soft to handle upon removing from oven
