Method
- Preheat your oven to 180C
- Grease a 9 inch cake pan
- In a bowl, whisk flour, baking soda, baking powder, and orange zest
- In another bowl using a mixer, beat the oil and sugar until fluffy. Gradually add in the eggs one at a time while continuously beating.
- Alternate adding the orange juice and the flour mixture into the egg batter. Do not over mix
- Bake for 35-40 min or until a toothpick comes out clean
Mascarpone Frosting
- Whip your liquid whipping cream with a machine whisk (make sure it’s cold) for a few minutes until fluffy. Do not over whip
- Fold the mascarpone cheese into the whipping cream, add the vanilla and the zest
- Frost when cake cools down completely
