Feta Wrapped in Phyllo
Crispy, creamy, salty, and sweet — the perfect bite.

You’ll need (for 1):
• 1 block feta cheese
• 3–5 phyllo sheets
• 4–5 tbsp melted butter @lurpakarabia
• Sesame & nigella seeds
• Honey (for drizzling)

To make:
1. Pat dry your feta block.
2. Brush one phyllo sheet with melted butter, place feta on top, and wrap it like a gift.
3. Repeat layering with 2–3 more sheets, brushing butter in between.
4. Top with sesame & nigella seeds.
5. Bake at 180°C for 25–30 min until golden.
6. Drizzle with honey while still warm.

Crispy outside, melty inside, and ready in under 30 minutes!

جبنة فيتا بعجينة الفيلو
مقرمشة من برا، ناعمة من جوّا، ومثالية للّقمة الحلوة والمالحة بنفس الوقت.

المكونات (لشخص واحد):
• مكعب جبنة فيتا
• ٣ إلى ٥ رقاقات فيلو
• ٤ إلى ٥ ملاعق كبيرة زبدة مذابة
• سمسم وحبة البركة
• عسل للتزيين

الطريقة:
١. نشّفي مكعب الجبنة بورق مطبخ.
٢. خذي أول رقاقة فيلو، ادهنيها بالزبدة، وحطي الفيتا بالنص ولفّيها كأنك تلفّي هدية.
٣. كرري الطبقات مع دهن كل واحدة بالزبدة حتى توصلي لـ٣ أو ٤ طبقات.
٤. رشّي الوجه بالسمسم وحبة البركة.
٥. دخليها على فرن محمى على حرارة ١٨٠ لمدة ٢٥–٣٠ دقيقة أو حتى يصير لونها ذهبي.
٦. أول ما تطلع من الفرن، وهي بعدها سخنة، زينيها بالعسل.

وصفة بسيطة وسريعة بطعم راقي ونتيجة بتشهي!

Creamy Scrambled Eggs (NO oil, butter or milk)

You’ll need:
• 3 eggs
• Salt, black pepper, chili flakes (to serve)

Method:
1. Whisk the eggs vigorously for about 2 minutes until frothy and bubbly — this is the secret to extra creaminess!
2. Heat a non-stick pan over medium heat.
3. Pour the eggs into the pan.
4. Using a spatula, gently push the eggs from the edges toward the center.
5. As soon as the eggs start to set slightly, lower the heat (or turn it off, depending on your pan’s heat).
6. Keep folding the eggs until they’re mostly set but still slightly wet.
7. Remove from the pan — they will finish cooking on the plate!

Tip:
• Sprinkle with salt, black pepper, and chili flakes before serving for extra flavor.

بيض مخفوق كريمي

المكونات:
• ٣ بيضات
• ملح، فلفل أسود، رشة شطة (للتقديم)

الطريقة:
1. اخفقي البيض جيداً لمدة دقيقتين حتى يصبح رغوي وفقاعات — هذا هو سر القوام الكريمي!
2. سخني مقلاة غير لاصقة على نار متوسطة.
3. اسكبي البيض المخفوق في المقلاة.
4. باستخدام سباتولا، ادفعي البيض من الأطراف نحو الوسط بلطف.
5. عندما يبدأ البيض بالتماسك قليلاً، خففي النار أو أطفئيها حسب حرارة المقلاة.
6. استمري بطيّ البيض بالسباتولا حتى يصبح شبه ناضج مع بقاءه رطباً قليلاً.
7. انقليه فوراً إلى الطبق — سيكمل نضوجه وهو على الطبق!

• رشي فوقه ملح، فلفل أسود، ورشة شطة عند التقديم لمزيد من النكهة

Bottarga Capellini You’ll need: • 1 bottarga

Bottarga Capellini
You’ll need:
• 1 bottarga stick, grated
• 1 garlic bulb, thinly sliced
• 1 tbsp chili flakes
• Zest & juice of 1 lemon
• ½ -1 cup olive oil
• 1 knob butter (optional)
• 1 box capellini or any thin spaghetti
• Salt & black pepper
• Chopped parsley (for garnish)

Simmer garlic + chili in olive oil on very low until golden, careful not to burn .
Turn off heat, stir in half the bottarga.
Cook pasta in salty water, add to oil with some pasta water.
Stir in butter (optional), lemon zest & juice, pepper.
Top with more bottarga + parsley. Serve immediately.

كابيليني بالبوتارغا
المكونات:
• عود بوتارغا مبشور
• رأس ثوم شرائح رفيعة
• ملعقة كبيرة شطة
• عصير وبرش ليمونة
• نصف كوب زيت زيتون
• قطعة زبدة (اختياري)
• علبة كابيليني
• ملح وفلفل أسود
• بقدونس مفروم للتزيين

نقلي الثوم والشطة بزيت الزيتون على نار هادئة حتى يصير لونه ذهبي.
نضيف نص كمية البوتارغا ونطفي النار.
نسلق الباستا بماء وملح، نضيفها على الزيت مع شوية من ماء السلق.
نضيف الزبدة (اختياري)، برش وعصير الليمون، وفلفل أسود.
نقدمها مع باقي البوتارغا ورشة بقدونس.
