In a large bowl sift together the dry ingredients
With an electrical mixer using the paddle attachment, cream together the butter and sugar until pale and fluffy, about 5 minutes
Add in eggs and mix until combined
Add in the dry mix, and mix on low speed until combined and a dough forms
Add vanilla extract and mix
Remove half the dough, make a ball, and place on a large piece of plastic wrap. Wrap the sides of wrap over the ball, then press down with the palm of your hand and make a disc. Finish wrapping the disc with the plastic wrap. Repeat with 2nd half of dough. Chill both discs of dough for about 1 hour.
Once done chilling, remove one of the discs and place the dough in between two parchment papers. It will take a couple of minutes to soften so use some arm strength to roll the dough into desired thickness. I would suggest around 1cm
Chill the rolled out dough in the fridge while you roll out the second piece of dough
Preheat your oven to 160C
Remove the first rolled out dough and cut out desired shapes and place them on parchment paper
If you want to guarantee awesome cookies i would suggest chilling in freezer for 10 min before baking in oven
Bake them for 12-14 min, until the edges are golden
Cool them before removing them as they will be soft to handle upon removing from oven
